Why We Started Making Our Own Noodles
Because eventually, opening the packet wasn't enough.

The Ramen Lab started with instant ramen. Pick a pack. Choose your toppings. Make it yourself. We loved that. Then curiosity did what curiosity does. What if we made the noodles too?
Flour. Water. Repeat.
Suddenly there was dough on the counter. Mixing. Resting. Rolling. Cutting. Testing. Too thick. Too soft. Again. There is something completely different about watching noodles go from flour on a table to a bowl in front of you. So we kept going.
The Ramen Lab was never supposed to stop at the machine.
We're not replacing instant ramen. That would miss the point. One side of the Lab celebrates the fun of Korean convenience-store ramen culture. The other asks how far we can take things ourselves. Handmade noodles gave us another answer. Made in our kitchen. Cut by hand. Cooked to order. Same Lab. Different kind of ramen.
Still experimenting.
Different doughs. Different thicknesses. Different bowls. We're learning what works and occasionally learning what absolutely doesn't. That's the fun part. The Lab isn't a finished idea. It's where we go to find the next one.
